Spice-Rubbed Pork Tenderloin

I get tired of cooking chicken all the time, so this is a nice way to mix up the weekly menu. Simple and delicious; I hope you enjoy!
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp ground coriander
  • 1 tsp thyme
  • 1/2 tsp salt
  • 1 1/4 lb pork tenderloin
  • 1 tbsp olive oil
  • 1 tsp minced garlic
  1. Preheat oven to 450 degrees.
  2. Mix all spices in small bowl, stirring with a fork to mix.
  3. Sprinkle spices over pork tenderloin and rub gently to cover entire surface.
  4. Heat oil in large skillet over medium-high heat. Add garlic and saute 1 minute. Add pork tenderloin and gently sear all sides for approximately 10 minutes, turning with tongs.
  5. Transfer pork to broiler pan (or dish with a wire rack atop) and place in oven. Bake for 20 minutes or until thickest portion reaches an internal temperature of 150 or 155.
