I get tired of cooking chicken all the time, so this is a nice way to mix up the weekly menu. Simple and delicious; I hope you enjoy!
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp ground coriander
- 1 tsp thyme
- 1/2 tsp salt
- 1 1/4 lb pork tenderloin
- 1 tbsp olive oil
- 1 tsp minced garlic
- Preheat oven to 450 degrees.
- Mix all spices in small bowl, stirring with a fork to mix.
- Sprinkle spices over pork tenderloin and rub gently to cover entire surface.
- Heat oil in large skillet over medium-high heat. Add garlic and saute 1 minute. Add pork tenderloin and gently sear all sides for approximately 10 minutes, turning with tongs.
- Transfer pork to broiler pan (or dish with a wire rack atop) and place in oven. Bake for 20 minutes or until thickest portion reaches an internal temperature of 150 or 155.
