- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs, lightly beaten
- 16 oz. canned pumpkin
- 3 1/2 cups flour
- 2 tsp salt
- 2 tsp baking powder
- 1 tsp nutmeg
- 1 tsp allspice
- 1 tsp cinnamon
- 1/2 tsp cloves
- 2/3 cup water
- Preheat oven to 350 degrees.
- Butter and flour 2 9x5 loaf pans, or line 24 muffin tins with liners.
- Stir together sugar and oil.
- Stir in eggs and pumpkin.
- Combine dry ingredients in separate bowl.
- Blend dry ingredients and water into wet mixture, alternating.
- Divide batter between two loaf pans.
- Bake for 30-40 minutes for loaf pans or 20-25 minutes for muffins, until cake tester comes out clean.
- For loaf pans, let stand 10 minutes then remove from pans to let cool.
