When you've had a stressful day and all you want is food in your mouth, and quick, this is the perfect Tex-Mex meal for you! With few ingredients and limited cooking time, it's a sure to quench your food craving. Top with lettuce, tomatoes, avocados, sour cream, shredded cheese, salsa etc. I hope you enjoy!
- 1 lb. ground beef or ground turkey
- 1 package Taco seasoning mix
- 1 can (10.75 oz) Campbell's condensed tomato soup
- 1 1/2 cups water
- 1 1/2 cups uncooked instant white or brown rice
- 1 can kidney beans, drained (optional)
- Cook beef or turkey and taco seasoning in skillet until browned. Pour off fat if necessary.
- Add soup, water, rice, and beans. Bring to boil and reduce heat to low. Simmer for 5 minutes or until rice is done.
- Top with desired toppings. Use chips to scoop or enjoy in a taco salad shell.
